I was born and raised in New Orleans, Louisiana. My earliest memories of yearning to cook have to do with an Easy Bake Oven. Being the youngest of 5 delinquent boys, there was no way in hell I was ever going to admit wanting one for Christmas. All of the marketing schemes by the diabolical conglomerate known as Hasbro, refused to acknowledge the fact that maybe a boy would like to bake a few brownies under a light bulb too. On TV it was only girls. On the box it was only girls. The choice lay clearly before me. Light bulb brownies or get my butt lit up by my brothers. I have never been one with enough will to say “no” to a delicious chewy chocolate delight. It was worth it!
I own over 1000 cookbooks. If we were to have dinner together in my home, you could point to any cookbook and I could tell you something about it. Don’t get me wrong, I’m not some kind of idiot savant or anything. I cannot even recite my parents or my siblings birthdays. It’s just this vast collection of cookbooks paired with a personality teetering on culinary compulsion that gives me such a great insight into what makes a truly great classic and timeless cookbook. I just have a love of cooking that has been both the pinnacle of my happiness as well as the cement boots that carried me to the bottom.
I am a graduate of the New England Culinary Institute class of 1994. I have been receiving a paycheck by cooking for 20 years. It has and continues to lead me all over the world. I have owned 3 successful restaurants during my career. I have been a private traveling chef and that has led me to New York, Mexico, Las Vegas, Los Angeles, Palm Springs, Idaho, Alaska, Greenland, Ireland, Scotland, Switzerland, Croatia and Italy. I am now the Executive Chef of the venerable Upperline Restaurant in my home town of New Orleans.
